How many of you love to smell bacon in the morning? Forget that, I love to smell bacon cooking at any time of the day but there is something magical about smelling bacon cooking first thing, Add a cup of coffee and you’ve got a great start to your day!
How to Make a Breakfast Burrito Bar for Your Family
First, chop up twelve pieces of bacon and one onion, and cook them on a hot griddle. When they are cooked, remove them from the griddle. Crack twenty-four eggs into a bowl and whip them. Add them to the griddle slowly, stirring constantly. Serve on flour tortillas with cheese, salsa, and sour cream.
Introduction
Before we go any further, let me tell you a little bit about myself and our crew. My name is Kaycee Hobbs. My husband and I are the proud parents of seven children who love bacon. Well, I believe all of them do except for our three-year-old Georgie Lou who acts her age. Somedays she loves bacon and somedays she hates it. Her words, not mine.
Anyway, we love to eat bacon and love to smell it cooking. It reminds us of all our camping trips. I don’t know about you but when I smell bacon in the morning it takes me back to the mountains of South Dakota when my mom would cook bacon and pancakes for breakfast. Those are some good memories!

Camp Chef Griddle
We recently purchased the Camp Chef PRO 90X outdoor cookstove. We have a few reasons why we chose to do this, and you can read about it in our post 4 Reasons Why We Chose Camp Chef Instead of Blackstone.
We love our griddle for a lot of reasons, but the biggest reason is that we can cook a lot of food at one time. Did we mention we have seven children? And guess what? They love to eat! So, this cookstove gives us the opportunity to cook and eat all at the same time.
We purchased the 24-inch griddle top and it works really well. The nice part about this is that you can be cooking your burrito bar and have a coffee pot percolating at the same time.

Recipe Ingredients
- 12 slices of bacon, chopped
- 1 onion, chopped
- Jalapeno pepper (optional)
- 24 eggs
- Splash of milk (optional)
- 30 flour tortillas
- 3 cups shredded cheese
- Salsa
- Sour Cream
Bacon
Now, I am sure it is no surprise to you that it starts with the bacon. We buy our bacon in bulk from a local grocery store. It comes in a ten-pound box and is considered the misfits of the bacon world. Frankly, I don’t really mind getting different sized slices of bacon because the price is considerably cheaper. We pick the slices from the box that will fit our current meal needs.
To begin cooking for your breakfast burrito bar, chop twelve slices of bacon into small, similar sized pieces. We try to pick the pieces that have about the same thickness so that it can cook at the same pace.
Rick heated our Camp Chef Griddle until it was nice and hot. When you put the bacon on the griddle you want to hear the sizzle immediately because this tells you the griddle is ready to go.
Once the griddle was sizzling, he added all the bacon. He spread it out so it could cook evenly. He would stir it up using the metal spatulas to make sure that it was browning evenly.
Onion
When we chopped our bacon, we also chopped our onion. We like to do all our prep work ahead of time so when the cooking part starts, it can just move along.
About halfway through the browning of the bacon, Rick add the chopped onion. If you have never tried caramelized onions, you are missing out, my friend! It’s like eating candy, no joke! The kiddos who do not like onions in our family, beg for caramelized onions. It really takes this burrito bar to the next level.
Rick just let all this yummy goodness cook together until the bacon became crisp and onions caramelized. This process can take a little bit of time so don’t try to rush it. Trust me, you will thank me later.
Once they were done, Rick scooped it onto a glass plate.
Eggs
Rick cracked twenty-four eggs into a large bowl and added a splash of milk. Now, I know adding milk to eggs can be a little controversial, but it’s what we like to do. If you don’t want too, it is not necessary so don’t do it.
Cooking eggs on a griddle is a show all on its own. We are total newbies to this griddle cooking and so we have found that it takes two people to cook the eggs. One person uses two spatulas to make sure the eggs stay on the griddle and that they don’t burn.
The other person pours the eggs slowly on to the griddle. Did I mention, slowly? Yes, this person needs to pay close attention to what the other person can handle and stops adding the eggs so they can catch up.
Rick found that if you cook some eggs and then create a circle of cooked eggs, it will create a small “dam” of sorts, so they don’t run everywhere. It was a little easier to do it this way.

Sam kept adding the egg mixture to the griddle and Rick kept stirring until they were all cooked up. Rick did need to oil the griddle a couple of times and he used olive oil.
Once the eggs were cooked through, we put them in a serving dish.
Jalapenos
Personally, I love spicy food but everyone in this family does not agree with me. I really wanted a few grilled jalapenos to add to my burritos, so Rick was a good husband and threw a few in the corner of the griddle. Don’t worry, it didn’t touch anyone else’s food!
Once they were nice and grilled, he put them on a small food tray for me to add to my meal.
Flour Tortillas
Once Rick was done cooking the eggs, he cleaned the grill and then laid the flour tortillas on the griddle. We like to use the fajita sized tortillas because the kids can load them up with as much filling as they want, and it is still easy to eat. Plus, I feel like they are more cost-effective. There is something about the kids being able to eat two or three burritos, they just seemed to like that.
The tortillas heated rather quickly which was a huge perk! It beat heating them in the microwave any day.
Toppings
Now, it’s time to top it all off! We like to set up our breakfast burrito bar with the following items:
- Sour Cream
- Shredded Cheese
- Salsa
- Jalapeno Fiesta Dip by Prairie Farms
The Jalapeno Fiesta Dip is a spicy sour cream-style dip that I use on a lot of things. It just added the extra zing to the breakfast burrito. If you can’t stand the heat, I don’t recommend it.
The kids love to be able to choose their own toppings! We love to give choices whenever we can and these “buffet-style” meals offer lots of those!

This breakfast burrito bar was a huge hit with our family. We had several kiddos who went back for seconds and thirds because they loved it so much!
